Sarah's Somethin' Somethin': "Meals made Simple"

One thing that I acquired during our many nutrition challenges, was a desire and passion to prepare and make delicious, clean meals.  When I first started this journey, I made it super difficult on myself- hunting and gathering meals on Pinterest like some kind of freak… Let me tell you, this is a guaranteed way to make you stress over eating clean- setting to many expectations and standards all about food- something you’ll devour no matter what for the pure reason of sustaining life. So, ditch the stress.  With that in mind, I decided my meals, in order to be delicious and nutritious to myself needed these two concepts: 1. The Meal Composure: Protein, Something Leafy and green, and a carb (one that I know from personal experimentation works well in my energy and digestion)  2. The Meal Trifecta: Somethin’ chewy, somethin’ smooshy, somethin’ crunchy.  As long as I view our plates being constructed from these two ideas, slinging meals seems much easier and more fun to go off the tracks with an unlimited boundary of flavors!   
Yesterday I knew I had a hot workout date at 5:30 with my main squeeze.  This night time gym stuff is rough when trying to cook dinner too, so I try to prep as much as possible!  In the morning I took a beef chuck roast and seared it with some olive oil, then plopped it into the crock pot. Sprinkled in some minced garlic and some amino acids… Fast forward 6 hours… I diced some brussels sprouts and threw them into a pan, coated with olive oil, sea salt and pepper.  Then, I chopped some sweet potatoes lengthwise about 1/2 inch thick, smeared some olive oil on them, some onion powder, some crushed red pepper and popped them into the oven at 350 for a 45-60 minute bake with one flip half way through.  After the first flip, the Lindblom clan made our happy little journey to the gym while our oven worked and then turned off on it’s own at the proper time.  Once we got home, and we were getting on the HANGRY side (so hungry you’re angry), I sauteed the brussels sprouts so that they were cooked through and had a char on the outside.  And there it is- the TRIFECTA: The Chew (yummy shredded beef), The Smoosh (golden baked sweet potatoes), The Crunch (flavorful, charred brussels sprouts).  It was easy, It was nutritious, and was all warm and ready to devour shortly after arriving home from getting our swole on! SO, think simple, think flavor, think TRIFECTA!
