So I went to Vegas for the first time.  Let me say, they don’t serve vegetables in Vegas… I mean, other then in the form of blended tomatoes accompanied with vodka. Anywho, I ate about 4 vegetables in Vegas- a couple of them pickled, and the other two that spent the day hot tubbing in a bowl of honey and soy sauce…  This trip, though crazy fun, once again showed me how much my veggie intake has increased and how crazy spastic I’ve become about eating them.  I do understand that not everyone is on a vegetable kick, and I also understand that some of us may need to hide vegetables from themselves like a couple of toddlers in order to fit them in their diet- and that’s OK! So, here’s some ideas and ways to hide yo veggies!
       First, there are zoodles.  These crazy concoctions are zuchinnis that have been dices to immitate- or mock- the idea of noodles.  They do carry lots of water, so beaware, and you may want to either: a) thicken up a meat sauce  or b) bake them for a bit on a low temperature on a bed of paper towels- then serve immediately.  Within this topic is Speghetti squash- it’s also a wonderful noodle mockery- less watery in substance.
Second, we got rice imitators! Cauliflower, when run through a food processor, or placed in a ziploc baggie and then smashed (to bits) serves as an amazing rice substitute.  You can saute it, serve raw, stuff it inside cabbage wraps, drop it in some soup- possibilities are endless. Cauliflower can also be boiled and then mashed for some crazy good mash potato immitators OR, after the mash, binded with egg and almond flour to create a crust for your pizza…
Third, there’s some broccoli slaw, which I find super delicious especially in the summertime when pulled pork sliders or other yummy bbq is on the menu.  Again, the veggie is just run throught a food processor or slice the stalks with a peeler and then have fun dressing it up with some olive oil, lemon, and honey.
      If you are still getting a bit gaggy with these options, then start small and mix in half and half of the real goods, with the veggies.  Trust me, you’ll enjoy it an in no time, you’ll be wanting more veggies in Vegas too.
